Harvest season in Texas is quite a thing. We’re putting on a 4-course, gourmet dinner at the Czech Out Ranch this October, showcasing all the amazing wild flavors of the Autumn Texas harvest-time!
We’ll have a short plant walk, to talk about what wild foods are currently in season, and then we’ll enjoy a curated, 4-course seasonal wild feast handcrafted to showcase all the wonderful, native flavors of the Texas Hill Country.
These dishes will be one-of-a-kind unique; put together by the amazing Lacie Wall, and we’ll discuss the process of coming up with novel and wild recipes to work with wild ingredients. Detailed information about each dish will be available, as well as copies of my book, “The Cycle of Foraging”, for anyone interested.
–The cost of the dinner is $60/person, and will include wine pairings plus samples of foraged cocktails!

We are going back to Green Valley Gardens this Fall for another weekend of fun and Wild Adventure!
Come and share in all the wonderful wild harvests around us and learn how to start your own Wild Foods Garden using beneficial species of edible native and wild plants.
We’ll also see how things are progressing here on the farm as we cultivate various wild species to help promote sustainable (and delicious) food systems while also restoring valuable natural habitat!
We’ll spend the first day going over plant identification and propagation techniques around the farm, followed by a campfire dinner. The second day we’ll dig in (to the soil!) as we work with various species in the gardens. Afterwards, we’ll dig in (to dinner!) as we enjoy another curated Wild Feast.

I will be speaking during the Farm and Ranch Freedom Alliance – Farm and Food Leadership Conference August 11th – 13th , in San Marcos, Texas.
The Farm and Ranch Freedom Alliance has been lobbying for small farmers and producers for years, and this is a GREAT event to meet discerning people, learn more about current events, and what you (we) can all do to improve our food supply and help protect our land. Texas leads the nation in loss of farmland. The answer lies in helping small farmers stay profitable and explore new opportunities. I’ll also be speaking on a panel about native and wild species of edible plants, and the implications they can have for food system sustainability and habitat restoration.
Topics covered at the event will include:
- In-depth pre-conference workshops to help farmers and producers with practical solutions, whether they be related to livestock or fruit and vegetable production.
- Knowledgeable and engaging speakers on topics that include the state of today’s farmers’ markets, nutrition, crop diversity, water policy, farm support programs, GMOs, food freedom, and more.
- Networking with individuals and businesses who care about our local farms and food.
